The two day festival is at The Silverton Lodge and Casino out on Blue Diamond Rd, where there'll be around thirty-four Foodtrucks filled with food to stuff your face with and fill you up till you feel sick!!

It was a chilly, breezy late afternoon and the sun was about to set, (Vegas can get pretty cold when the sun goes down) but we were excited to get a first chance at eating some good grub! As it wasn't highly publicized, there wasn't a large crowd which was great because of no lines and little wait time! Best conditions for gluttony!

Having heard a lot about this Truck, we were excited to try their stuff, they make handmade Pocket Pies from scratch that are, 'Fried to Perfection', need we say more?

Having heard a lot about this Truck, we were excited to try their stuff, they make handmade Pocket Pies from scratch that are, 'Fried to Perfection', need we say more?
We started with the Toasted Ravioli with Marinara Sauce....Righteous!!! Fried really well, you tasted the Ravioli, the Ricotta and with the Parmesan and Marinara on top, it was mighty tasty! If you have been disappointed with this dish before, I'd say this will change your mind, they do it right.
Next we moved onto the Pies, we ordered the Daily Special: Pulled Pork in a Tangy BBQ Sauce with a Side Slaw to stuff: the Pie was flakey, crispy and hot which made it delectable, exactly what you would expect from a pocket pie. The pork filling was moist and soft and the bbq sauce tangy, but the best was the slaw on top-it REALLY put this dish over the top!

The Pork Belly: With Pickled Mustard Greens and and Crushed Peanuts. This was an incredible Bao, crunchy textures with fatty pork, it had robust flavors in such a small package! And the great thing about Baos, the filling can be pretty heavy, but the Bao will soak it all up and balance it out-amazing!
The Pork Belly was my favorite out of the three.....
The Roasted Duck Bao: with Cucumbers, Scallions and Hoisin Sauce. Who doesn't like Duck? And with a crispy skin, the cucumbers offset the delicious meat and the tangy sweet hoisin brings it all home!
The Tsukune: Marinated Chicken Balls with Onion Lime and Cilantro. This one was an unexpected delight: I love Tsukune, and this one was robust on the soy and yet the Onion and Cilantro mellowed it out. I could have had ten more of these!
As you can tell... I hate it!! JK, I can't wait to get to this truck again, or maybe I'll just stop on over to their cafe and sit all day stuffing my face with Baos...cuz that's my heaven!!!!
We took one last stroll around the grounds to check out anything that caught our eye. We stopped by The Redneck Kitchen and looking at the menu, the Chicken Waffle Taco peeked our interest, Golden Crispy Chicken enveloped in a Vanilla Waffle with a Maple Bourbon Butter Syrup and a Sweet Southern Glaze.
It was both sweet and savory, my favorite combination, and on the table was a lineup of various hot sauces ranging from the mild to the wild. I decided to add the hottest called, 'ghost of my grandma' to give it a little kick, and it did!!!
There a bunch of other Foodtrucks in attendance, but being just the two of us, we couldn't get to all of them...but here's some pics of the others....

The simple, crunchy, cold slaw tasted refreshingly sweet against the warm pie and tangy filling, we were in love with this combination. Kudos to Roamin Dough for creating this flavor profile!
For the dessert, the Apple Fritter Bites caught our attention-which was a good deal. It's made of Sweet Cinnamon Dough with Fresh Apples, you couldn't get any better for dessert!

We hit it off right from the start with Chi-Town, Chicago style Subs with Las Vegas Glitz: a little Gangsta, a little Bling and BAM! a lotta flavor!! We hit it off with the owner and chirped away a good part of our evening!
We ordered 'The Capone": Vienna Italian Beef, topped with Gravy and Giardiniera in a roll thats dipped in an 'Au Jus' sauce- guys, trust me on this-get it Dipped. You want a lot of Au Jus because it is amazing!!!! This was a quintessential Sub sandwich: well seasoned, soft meat topped with a flavorful Gravy, a spicy Giardiniera sauce for heat and a wet roll.....it was devoured immediately!!
.....In fact so fast, we forgot to take a picture of it.....Guess we're still new at this.....but we were so hungry at the time and it tasted so good....anyways we highly recommend getting it
Great Bao: Chinese Sandwiches
Again, another Foodtruck that we heard so much about, but never got a chance to try- so we were elated to try their Baos...
Without trying to explain the whole history of Baos, it is a steamed, white, spong-like bread used in this case to sandwich various savory and sweet fillings; this truck serves the best in Chinese delectable bites in a traditional and contemporary fashion, fitting perfectly with the Foodtruck model.
Succulent and mouthwatering, we ordered the Pork Belly, Roasted Duck and Chicken Tsukune for our Baos and observing the Chef, we could tell that much care and preparation was taken into each order - and the wait was definitely worth it!
