Downtown3rd Farmers Market + Great Bao Food Truck @ Casino Center, Las Vegas

We've reviewed Downtown3rd Farmers Market before and it's worth repeating, mostly because it's another integral component of revitalizing Downtown and bringing a sense of community to the area. The Farmers Market is housed in a former Bus Station, an ingenious recycling and reuse of existing structures making it all the more reason to go and check it out.  In addition, there's a slew of food trucks parked outside for lunch and nibbles.

The Great Bao

The Great Bao food truck is always a welcoming site -they are consistently high with the quality of food they produce and the price point make this gourmet mobile eatery a destination F&B venue. It's a limited selection, usually only three types are available at any given time, It's $3.50 each or $10 for three -which is actually quite filling due to it's satisfyingly rich ingredients.

I ordered two Baos and a Milk Green Tea; it takes some time to prepare, but in the end it is so worth the wait.  Chef Sheridan Su takes great care in preparing each Bao with some of the best ingredients I've ever had on a sandwich.  And the meats he makes are so juicy and succulent, it really is better than any top brick & mortar restaurants that serve the same dish.  Honest to god, Baos are  perfect for the Food Truck model.

It's really easy to order at Great Bao; they have two permanent Baos and then one wild card-The Pork Belly and the Roasted Duck.  These two are definite must get, the wild card is just preference (sometimes it's chicken meatball, sometimes it's vegetarian).

The Roasted Duck came with Scallions, Cucumbers and Hoisin Sauce-it's really a great combination of a fatty meat with the crisp lightness of the vegetables.  And I love Hoisin Sauce, it's the best condiment and I alway have it in my fridge.

The second Bao is the Pork Belly with Pickled Mustard Greens, Onions,  Peanuts and Cilantro.  T ePork Belly is braised overnight so it's moist and robust and packed with flavor.  On this occasion, the Pickled Mustard Greens were truly excellent and just ignited the dish into another level of awesomeness!

I wish I could come down here every Friday to get my produce and food truck fix; it's totally worth the trip!
